Easy, Simple Taco Soup

During this busy holiday season, its always nice to come across an easy meal that doesn’t take long to prepare.  My grandson’s love tacos and, if they could, would eat tacos every night.  My daughter found a recipe she knew they’d enjoy; Taco Soup.  Needless to say, they loved it!  Lots of ‘good-for-you ingredients’ and a BIG taste.  Enjoy it with cheesy quesadillas or with plain tortilla shells, sour cream and mexican cheeses.  Le gusto su comida!

TACO SOUP

1/2 LB. Ground Round

1/2 White Onion

1-Can of Diced Petite Tomatoes

1-Can of Original Mild Rotel

8 ounce Can of Tomato Sauce

1-Can of Mushrooms

1-Can of Black Beans or Red Beans (your preference)

1-Package of Taco Seasoning

1-Can of Corn

1-Can of Beef Broth

Chop up onion.  Brown the 1-Lb package of Ground Round. Add onion just before beef has cooked.  Drain the oil.  Add all other ingredients(do not drain liquids). Stir and cook on medium for 15  minutes.  Serve with a dollop of sour cream, grated mexican cheese and warmed tortilla shells.  Make things real exciting and add a Grande Margarita on the rocks or an ice cold beer!
