Fun Summer Party Recipes

Already got your Memorial Day weekend planned but still trying to decide on something unique and fun to bring to your poolside party?

A co-worker of mine (shout out to Kate) was telling me about an event she recently attended and she made jello shots for it. But these aren’t just any jello shots, they’re the cutest, most Pinterest worthy jello shots I’ve ever seen. And I told her if I brought those to my Memorial Day bbq, I would be the coolest person there…except most of my friends are pregnant or have children and won’t be indulging in any jello shots this weekend. But then she said she made them for the kids in a non-alcoholic version as well!

So what I have for you are 2 recipes: the alcoholic and non-alcoholic version of these delicious and super cute mini watermelon jello shots that will leave your barbecue mates jealous that all they brought was a veggie plate.

With alcohol:

Ingredients: Limes, watermelon flavored jello, Sour Apple Schnapps, vodka, and Midori (if you want a jolly rancher flavor), chocolate chips

How to make them:

  1. Cut the limes in half, clean out the insides of the lime so you only have the rind left
  2. Mix together 1 cup water, 1 cup alcohol mixture (Kate says to make them delicious you need to use Apple Schnapps, vodka, and Midori) and 1 package of watermelon flavored Jello
  3. Pour the mixture into the lime halves
  4. Place in the refrigerator over night
  5. Next day: Use a sharp knife to cut each lime half into wedges
  6. Melt some chocolate chips in the microwave
  7.  Use a toothpick to dip into melted chocolate
  8. Dab Jello with chocolate dipped end of toothpick to create the seed look

Non-alcoholic:

Do everything the same except leave out the alcohol. Use the instructions on the back of the Jello box to make the Jello (basically substituting the alcohol for water).

There are also other great recipes where you can use orange peels and orange flavored jello or limes with a tequila mixture…so many fun ideas, but I have yet to see something as cute as the mini watermelons and I bet with the chocolate in the middle, it’s extra tasty!
