The Icing on the Cake!

Call me crazy, but I’m not an icing person.  When birthday cake gets cut I wait for an ‘inside’ piece.  And I still scrape off the sugary stiffness on top.  Ugh…

Occasionally… more like, once in a blue moon, I taste an icing that I actually like.  But just recently, after Googling for a dessert recipe to surprise my husband with, I discovered a gem.

Pistachio Cake Recipe

While I highly recommend this recipe in its entirety, the reason I adore this icing recipe is because A.) It’s super easy B.) It tastes AH-mazing and C.) You can change it up with any pudding you like!  I’ve already made a couple of other variations that went over really well!  I made some Banana Split Cupcakes by using Banana pudding mix instead of Pistachio and following the box recipe for Strawberry cupcakes and mixed in some mini chocolate chips.  They went quick!  I also followed the Pistachio Cake Recipe but used Confetti cake mix and Vanilla pudding mix for the cake and Chocolate pudding mix for the icing.  Again, de-lish-ous!!!

With its green color, this cake is sure to be a crowd pleaser for all your St. Patrick’s Day gatherings and celebrations!  A quick word of advice when buying your pudding mix, make sure it’s instant and NOT the kind you have to cook.  While I learned that one the hard way, everything else is just icing on the cake!
